dc.description | El calostro constituye el primer alimento consumido por mamíferos recién nacidos como los búfalos de agua. Los componentes nutricionales del calostro permiten usarlo como fuente de energía para producir calor y como mecanismo para compensar la inmunidad pasiva de las crías recién nacidas. Además, es una fuente de proteínas, ácidos grasos, carbohidratos, vitaminas y minerales que coadyuvan en mantener el buen estado de salud y promueven la vitalidad de los neonatos en sus primeras horas de vida. No obstante, la calidad del calostro de las búfalas de agua puede diferir dependiendo de la raza, alimentación, estado nutricional de la hembra y los días transcurridos en el posparto. Por ello, se planteó este artículo con el objetivo de discutir el proceso fisiológico por el cual se produce el calostro en búfalas de agua, así como describir sus propiedades fisicoquímicas, nutricionales y su transición a leche, analizando los factores que inciden en su calidad y que podrían beneficiar o afectar la calidad inmunológica y nutricional de este denso líquido. Colostrum is the first food consumed by newborn mammals such as water buffalo. The nutritional components of colostrum are a source of energy to produce heat and is a mechanism to compensate for the passive immunity of newborn calves. In addition, it is a source of proteins, fatty acids, carbohydrates, vitamins and minerals that help maintain good health and promote the vitality of neonates in their first hours of life. However, the quality of colostrum from water buffaloes differs according to breed, feed, nutritional status of the female and the number of days postpartum. Therefore, the objective of this article is to discuss the physiological process of colostrum production in water buffaloes, as well as to describe its physicochemical and nutritional properties and its transition to milk, analyzing the factors that affect its quality and that could benefit or affect the affect the immunological and nutritional quality of this dense liquid. | es-ES |
